Cranberry and White Chocolate Cookies

‘Tis the holiday season, which for me means I am elbow deep in dough and sweet treats. I love baking, it brings me a lot of peace and I absolutely love sweets. This is a new recipe I tried out for a Friendsgiving party that went over so well I didn’t get to eat any except for the few right out of the oven. These are a lighter and more seasonal version of a chocolate chip cookie.

  1. Soften 1 cup of salted butter (2 sticks). I normally use this time to clean my mixing bowls and baking sheets.
  2. Add butter to mixing bowl, the zest of half of an orange, and about 1 cup of white granulated sugar. Mix until visually looks homogeneous (all the same).
    • If you would like a stronger orange flavor, I would do the zest of a whole orange or add orange extract later in the recipe. Because of the egg and baking powder, I would avoid the juice of the orange or any direct acid.
  3. Add one egg – ideally room temperature. Mix until you can’t identify any egg.
  4. Add 1 teaspoon vanilla extract and a teaspoon and a half of baking powder. Mix gently!.
  5. Incorporate 2 cups of flour (all purpose is perfect, but bread flour works fine too). Mix until it looks a little bit like playdough. It should stick to itself but not to you.
  6. Pour in 1/3 cup of white chocolate chips and 1/3 cup of dried cranberries. Stir the add-ins into the dough. There is no worry about sinkage as they are cookies and you will be making individual dough balls soon.
  7. On a baking tray, scoop dough into 1 inch balls.
  8. Bake cookies for 11 minutes at 350 F degrees.
  9. Allow to cool and enjoy!

  • Orange zest
  • Salted butter – 1 cup, softened
  • White granulated sugar – 1 cup
  • 1 chicken egg
  • Baking Power – 1 1/2 teaspoons
  • Vanilla extract – 1 teaspoon
  • Flour – 2 cups
  • Dried cranberries – 1/3 cup
  • White chocolate chips – 1/3 cup
  • Large Mixing Bowl
  • Baking Sheet
  • Fork or Whisk
  • Oven – preheated to 350 degrees
